Observation (CORRECTED DURING INSPECTION): Gulab jamun in one of the sweets cooler found at 19C (room temperature). Machine had been turned off overnight.
Corrective Action(s): Discarded voluntarily at time of inspection. As discussed, gulab jamun must be stored at 4C or below at all times.

Observation: Numerous dry product bins found with makeshift scoops (buckets, containers, etc) that were left in product
Corrective Action(s): 1) use proper scoops with handles
2) Do not store dirty scoops in the product bins. Use cleaned and sanitized scoop containers, or hooks to keep scoop handles from contaminating product.

Observation: Low level of rodent droppings observed in back (dish pit) area, and along walls by your prep coolers.
Corrective Action(s): Additional cleaning needed on a daily basis to remove food debris (pest attractants) from these areas.
Clean up droppings with 9 parts water to 1 part bleach. Document where droppings are found and provide that information to your pest control company.
Do regular checks for chew marks, holes, and the integrity of door sweeps.

Note: a new cooler has replaced a previous "Coke" machine at front, a large chest freezer has been removed, and a small chest freezer added to main kitchen area. OK

Sanitizer spray bottle tested well above 200ppm chlorine - dumped and refilled at time of inspection. I recommend writing 5ml bleach (1 teaspoon) and 1 litre of water on the spray bottles so staff won't get mixed up when preparing this solution
General sanitation has improved since last inspection. Good, but please continue this trend to rid yourselves of the rodent infestation.

A follow up inspection will occur within 1 month to spot check proper sweet storage, scoops, sanitizer concentrations, and mouse situation.
