Temperature records are getting maintained daily for a single dish that is prepared in large quantity - OK.
Please also include daily readings of your critical coolers - display cooler, prep cooler, walk in cooler.
Observed proper cooling practices of product on site - large pot getting mixed with 2x ice wands to rapidly cool. Good
General sanitation is satisfactory, however storage remains a problem due to size of kitchen vs. volume of food.
***Ensure mint chutney is stored at 4C or below as it is not a shelf stable product.
