-Permit is posted
-Hand wash station is fully equipped with liquid soap, paper towels, and running hot/cold water
-Walk-in cooler and prep-coolers are at 4C
-The right side display cooler is on and is used to display items that are time controlled. Time log is maintained.
-Trunk freezer is at -18C
-High temperature dishwasher achieves 71C at plate level
-2 compartment sink is used appropriately
-QUATs solution in spray bottle achieves 200ppm
-Dry storage is good. Pest proof containers are used and food is stored above the ground
-Dough mixer was being cleaned at the time of inspection
-Fume hood is clean
-New tiles have been placed throughout kitchen. GOOD!
