302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1. Low temeprature dishwasher dispensed 0 ppm chlorine at the plate level. Glass wahser in the bar area dispensed 0 ppm chlorine at the plate level. Stock sanitizer bottles for both mechanical washers were not empty. The operator called a technican to fix both washers. 2. 50 ppm quaternary ammonium measured from sanitizing spray bottles and dispenser. 200 ppm quaternary ammonium is required for proper sanitation.
Corrective Action(s): 1. Manually wash, rinse and sanitize all dishes, utensils and glasses or use the dishwasher/glasswasher to wash and rinse and manually sanitize until both washers serviced/fixed. Clean and sanitize all dishes, utensils and glasses before use. The operator set up manual sanitation with 100 ppm chlorine solution.
2. Discard and refill all sanitizing spray bottles with approved sanitizers such as 200ppm quaternary ammonium or chlorine solution. Clean and sanitize all food contact surfaces before use. The operator had refilled sanitizing spary bottles with 100 ppm chlorine solution.

Observation: Grease/dirt build up under the preparation coolers and cooking equipment.
Corrective Action(s): Clean the area mentioned above on a regular schedule, especially those hard to reach areas. Correct by: Feb. 13, 2019

Observation: 1. Low temperature dishwasher and glasswasher dispensed 0 ppm chlorine solution at the plate level. 2. Prep cooler near the hand washing station measured with an ambient air temperature of 11C. No potentially hazardous foods were stored inside at the time of inspection.
Corrective Action(s): 1. Service/fix the low temperature dishwasher and glasswasher to ensure at least 50 ppm chlorine solution is dispensed at the plate level. Correct by: today.
2. Service/fix the prep cooler mentioned above to ensure 4C or lower ambient air temperature is maintained. DO NOT stored any potentially hazardous food in this cooler until then. Correct by: Feb. 13, 2019

- Walk in cooler at 4C.
- Walk in beer cooler at 4C.
- Three chest freezers at required temperature.
- Up right freezer at -20C.
- Hot potentially hazardous food hot held at 63C.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- Ice machine in a clean condition.
- No pest activities observed.
