Observations: renovated kitchen operational. walk in cooler 4 c walk in freezer -21 c dishwasher final rinse 165 f hand wash sinks supplied with soap and paper towels quat sanitizer at 3 compartment sink 200 ppm temp logs kept no evidence of pest activity minimal food prep at this time, commercially prepared re-therm food items in use during transition period from old to newly renovated kitchen paper towel dispenser at hand sink station to be relocated to avoid water dripping onto counter top
