Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: One meat slicer (left unit and not taken apart) appears to have some meat debris under the guard. Staff informs that meat slicers are cleaned and sanitized before and after use.
Correction: All staffs using the meat slicer must take apart the unit and properly clean and sanitize the meat slicer as discussed.
Comments

Pizza toppings cooler serviced by Cool King Refrigerator (March 12. 2018) - report reviewed, coil changed.
Toppings were able to be stored at 1.9C to 3.6C.
Sous vide eggs kept at 145.5F.
Garlic butter is kept in the cooler at 4C. Seafood toppings also stored in the cooler at time of inspection. These items are only taken out on counter in ice bath during lunch/dinner rush.
Tomato sauce is kept in hot holding unit at 60C; meatballs next to the tomato sauce is stored at 65.4C
Cleaning of the walk-in cooler floor is complete.
Some more cleaning around autosham and meat slicer is required as discussed. Please have that completed.
