-Ensure that the water drainage line on the new ice machine drains directly into the floor drain and not onto the floor first. Hand sinks supplied with hot and cold water, soap and paper towels. Quats sanitizer in use, test strips available. All coolers were < 4 C. All freezers were < -18 C. No evidence of pests. Pest control invoices on site. New ice machine installed. It was clean. New deep fryers installed. Deep fryer procedures reviewed. Temperature records up to date. General sanitation was satisfactory.
