Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher not achieving the minimum required level of sanitizer. It was found that the one of the tubes was disconnected from the machine during yesterday's maintenance service. The tube was reconnected and >50ppm chlorine was achieved at the plate level after final rinse. All dishware washed through the dishwasher to be rewashed by staff at this time.
Corrective Action(s): Ensure to have the sanitizer level monitored using the test strips available on a regular basis.

Routine inspection conducted for Deli:

- Handwashing stations adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at/below 4'C; Freezers operating at -18'C.
- Temperature monitoring system in place.
- 200ppm Quats available. Automated dispenser at correct concentration.
- Ice machine satisfactory. Scoop stored in proper manner.
- Food products stored in pest proof containers and 6 inch off the floor.
- Professional pest control company contracted. Traps in place.

General sanitation level satisfactory throughout, except mentioned above.
