301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): A few items stored on clean equipment racks were noted to have old food debris on them.
Corrective Action(s): Items were placed in dishwashing pre-rinse sink to be washed and sanitized. Ensure only cleaned and sanitized equipment are stored on the clean racks.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1) Dishwasher only reached 64C at the dish surface during the final rinse cycle. A minimum of 71C at the dish surface level is required.
2) No surface sanitizer solution was available for use while the kitchen was in use.
Corrective Action(s): 1) All dishes must be manually sanitized in 100 ppm bleach solution after being washed in the dishwasher. This must be done until a follow-up inspection by the health inspector has confirmed that the dishwasher can be used again.
2) During all hours of kitchen operation, sanitizer solution must be available for sanitizing surfaces. Mix 1 tsp bleach with 1 litre of water, and use this solution to sanitize food prep counters/surfaces. Change the solution every 4 hours at a minimum.

Comments

- Hand washing sinks supplied with hot and cold running water, liquid soap, and paper towels
- Walk-in cooler measured to be below 4C. Food items were covered, stored off the floor.
- Back kitchen doors were kept closed - good.
- Pest control in place. Please email pest control reports/invoices from the last three months to Ying.Tan3@fraserhealth.ca
- Ensure that whenever the kitchen is in use, there is at least one person on-site who has a valid Foodsafe Level 1 Certificate.
- General sanitation has improved, however hard-to-reach corners of floors require attention
