Production room 1:
Hand wash station is supplied with hot and cold running water, liquid soap and paper towels in dispensers.
Quat sanitizer available >200ppm.
3-compartment sink and drying rack space in wine testing area.
Fly light available in production room.
Barrels of wine are stored in production room.
Bottling is done by contractor in Interior Region and not on site.
Testing is done by laboratory.
Insects, larvae and spider webs around on floors, corners, walls will need cleaning and powerwashing before processing again.

Production room 2:
Operator plans on making Brandy an other distillery products.
Equipment has been purchased, installed.
Please provide process and equipment list for file.
No hand sink in this processing room. Operator agrees that staff will use other production room hand sink and come through doors that lead to adjoining room.
There is equipment and dry storage outside of this second production room. Hand sink at this door is recommended.

Dry storage is outdoors in a covered patio. Operator says equipment and barrels are power washed before use.
Storage needs to be ideally in a room that is easily cleanable and does not allow pests or wildlife to have access.
Operator agreed that during rainy season, dry storage will be moved into greenhouse where it is covered and protected.
