302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1. Multiple utensils stored in clean storage containers (spatulas, tongs, ladles, serving items) were observed with dried-on food debris present on food contact surfaces. One large insert tray in clean storage was also observed with food debris present on surfaces.
2. [Repeat violation]: A stack of reused takeout containers in clean storage was observed to have food debris and water still present on/within the stack. Photos taken.
3. Meat slicer was not properly cleaned and sanitized after use. Staff stated unit had not been used recently. Food debris present on blade and in blade guards.
4. Ice machine had a slight mould/pink slime accumulation under cube tray.
5. High-temperature dishwasher did not reach a final sanitizing rinse temperature of 71 C or higher (maximum 67 C reached after several cycles).
Corrective Action(s): 1. Re-washed during inspection. Ensure staff thoroughly wash, rinse and sanitize all utensils and dishware after use. Do not place dirty utensils back in clean storage areas.
2. Discarded. Do not reuse disposable takeout containers, as these cannot be adequately cleaned and sanitized.
3. Cleaned during inspection. Ensure staff thoroughly clean and sanitize this equipment after use - do not leave the slicer in dirty condition after use.
4. Machine to be cleaned and sanitized by tomorrow (27th February 2018) at the latest. Call for reinspection once cleaned.
5. Dishes run through sanitizing bleach bath during inspection. Ensure all dishware (including items used in the kitchen only) is washed, rinsed then soaked for 2 minutes in 100ppm chlorine sanitizer. Air dry items after this process. Do not run items through the dishwasher until fixed and reinspected by a health officer.

Observation (CORRECTED DURING INSPECTION): A bag of rice or similar grain product was stored directly on top of grain products in one bulk bin.
Corrective Action(s): Removed during inspection. Ensure product bags are not placed directly on top of uncovered food products, as this may contaminate the food.

Observation (CORRECTED DURING INSPECTION): [Repeat violation]: staff appear to be reusing single-use plastic takeout containers (see violation (302)). This issue has been discussed and corrected at at least two past inspections.
Corrective Action(s): Containers discarded during inspection. If they wish to reuse these containers, ensure staff use only products designed for reuse - these single-use containers cannot be adequately cleaned and sanitized. Note: Correction ORDER issued.

Observation: High-temperature dishwasher did not reach a final rinse temperature of 71 C or higher at the plate level during inspection.
Corrective Action(s): Have unit repaired or replaced, and operating at this temperature, by tomorrow (27th February 2018). Call area health officer for reinspection once fixed. Use only takeout/disposable dishware once supply of sanitized reusables runs out.
