304 - Premises not free of pests [s. 26(a)]
Observation: Drain flies and fruit flies observed around drains, grease trap, floor and walls in storage and sinks area. Observed fly sticky trap full of variety of flies. Main concentration of flies around 3 compartment sink and grease trap. Blreeding cycle clearly not broken and daily controls measures for the drain and fruit flies inadequate.
Corrective Action(s): A) Improve cleaning procedures for this room. Any ponding or stagnant water or beverage residues will allow breeding to continue.
B) Continue to have Pest Control identify potential drain/fruit fly breeding habitat, and work to develop a plan to eliminate drain fly problem.
**Send report from Pest Control detailing all potential breeding habitat in sinks/storage room and corrective/maintenace actions required to eliminate fly problem.
Submit detailed report within 14 days of inspection.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Floors generally dirty and observed very dirty below and behind beverage station, under and around equipment etc. Significant syrup dripping noted under beverage syrups. Potential food source for pests. Walls around and 3 compartment sink itself excessively dirty.
Also noted the floor in the back mop sink area of the store accumulating syrpus and food debris around stacked pop and floor drain area.
Corrective Action(s): Improvements must be made to the quality and detail of the daily cleaning. Any spills and accumulations of food debris should be cleaned up immediately with a general cleaning of facility at the end of the day. Cleaning schedules and processes must be clarified/adjusted to ensure the store is cleaner.
**Pests issues can only be addressed when food sources are eliminated without delay.
Check at follow up inspection date noted.

Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Sandwich cooler measured 11 C to 14 C in multiple locations and with IR gun and proble thermometer. Reviewed temp logs from today at 7 AM and indicated 3.5 C. Checked multiple times during inspection. Discussion with operator that unit due for replacement.
Correction: Remove all potentially hazardous foods from this unit until it can consistantly maintain food at 4 C or less (at all times). Re-inspection required prior to use.

Premises continues to have issues with storage of product negatively affecting cleaning. Boxes and various packaged food items crowd the sink room and back mop room. It is very difficult to clean these areas. Food storage must be organized including be stored off the floor on shelves so the floors can be properly cleaned, to maintain organization, and to monitor for pest activity, for food spills etc.
There is not enough storage space in the defined storage areas of premises. An alternate area for storage must be created at this location.
**The existing dining area would be a viable storage area, either in its entirety or a portion thereof to help improve storage practices at this premises.
Until such time that a viable system of cleaning, storage and stock rotation can be established the existing dining area may not be used.
