Observation: - Observed deterioration of wooden baseboard in the walk in cooler.
- Observed the door of the walk in cooler in not good working order.
- Observed broken tiles near the fryer.
Corrective Action(s): Major upgrades must be made in the areas noted above that meets the standards and requirements of the Food Premises Regulation and the Food Retail Food Services Code. These upgrades have been noted from previous inspection reports and must be followed through. The following changes must be made:
- Replace the wooden baseboard with smooth, durable material that can be easily cleaned.
- Replace the door of the walk in cooler
- Replace broken tiles

Observation: Observed dead mouse in the Tin cat mousetrap near the back door.
Corrective Action(s): Call your pest control company to empty all Tin cat mousetraps. Date to be corrected. Immediately

Observation: Observed significant build up of grease and dirt all around the perimeter of the kitchen (i.e. along the walls beside the main grill station, walk in cooler, fryer).
Corrective Action(s): Remove all build up of grease and dirt in the areas noted above. Ensure to move the appliances noted above to properly clean behind them as part of a routine cleaning schedule. Date to be corrected: February 27, 2017.

- General sanitation is good.
- Hand sinks stocked with cold/hot running water, soap, and paper towels.
- All coolers < or = to 4C
- All freezers < or = to -18C
- All hot holding units > 60C
- Low temperature dishwasher dispensed 100 ppm chlorine sanitizer.
- Glass washer dispensed 12.5 ppm Iodine sanitizer. Iodine test strip available. Please ensure to test and monitor the Iodine concentration daily.
- Surface sanitizer was available at 200 ppm Quat.
- Dry storage area is good
- No signs of pest activity.
