Observation (CORRECTED DURING INSPECTION): Foods in the hot holding cabinet were less than 60C.
Corrective Action(s): Hot potentially hazardous foods must be maintained at or above 60C to prevent the growth of pathogens and or the formation of toxins. Operator stated the food items are sold within 2 hours. Potentially hazardous foods can be stored between 4C to 60C for 2 hours, if a time tracking system is implemented.

Observation (CORRECTED DURING INSPECTION): Meat was found thawing at room temperature.
Corrective Action(s): Frozen potentially hazardous foods must be thawed under cold running water or in a cooler at 4C or less to prevent the growth of pathogens and or the formation of toxins. Meat was less than 4C and was placed under cold running water at the time of inspection.

Comments

-Both upright coolers were at 4C.
-Under counter cooler was at 4C.
-Upright freezer was at -16C.
-Temperatures are checked and recorded twice daily.
-Chicken was cooked to greater than 74C.
-Cleaning and sanitizing carried out in the 2-compartment sink. Quats sanitizer was at 200ppm.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer pail was labelled and tested at 200ppm. Sanitizer is replaced every 2 hours.
-Equipment was found to be clean and sanitary.
-General food storage practices good at the time of inspection. Foods stored off the ground and covered.
-Facility serviced by a professional pest control operator on a weekly basis. No signs of pests noted at the time of inspection.
-FOODSAFE Level 1 equivalent valid until February 18, 2023.
