Observation (CORRECTED DURING INSPECTION): No food contact surface sanitizer solution prepared at the start of the inspection. Person in charge was educated and they prepared the solution at that time. A bucket with cloth was prepared, with bleach. Bleach solution achieved 200ppm.
Corrective Action(s): Ensure food contact surface sanitizer is prepared for use.

Observation: Following areas require attention:
1)Fume hood is compartments are covered in grease and debris. Service is scheduled for next week
2)Back storage areas require cleaning due to spilled onions and food debris
3)Walk-in cooler fan has accumulation of dust/debris
4)Food spillage and debris is built-up behind stoves and burners
Corrective Action(s): Clean and sanitize all items noted above. These areas should be cleaned more frequently to avoid build-up.

-Handwash stations are fully equipped with liquid soap, paper towels, and hot/cold running water. *Ensure paper towel dispenser does not jam frequently*
-Walk-in cooler and display coolers are at or below 4C
-Trunk and stand freezers are at -17 and -18C, respectively
-Bleach solution in bucket with cloth is available and achieves 200ppm
-Bleach sanitizer available for manual dishwashing
-Dry storage is satisfactory. Food is stored above the ground
-No signs of pest activity. Ensure backdoor remains closed
