Routine inspection
-Coolers at 4 C or below.
-Hot holding of foods at 60 C or above.
-Discussed with staff how meat is cooked prior to hot holding. Chicken shawarma has a secondary cook step.
-When transporting foods from main location, ensure cold potentially hazardous foods are transported at 4 C or below and hot potentially hazardous food are transported at 60 C or above.
-Hand washing sink equipped with hot and cold running water, liquid soap and paper towel.
-Bleach sanitizer (at 200 ppm chlorine) in buckets available throughout facility.
-Two compartment available for manual dishwashing. Staff were able to demonstrate manual dishwashing correcting.
-High temperature dishwasher not regularly used. Ensure temperature reaches 71 on plate surface if using dishwasher. Facility is limited to single-service utensils only.
-Permit to Operate posted.
-General sanitation satisfactory. Facility kept in an organized condition.
-Staff wearing hair nets.
*Recommend staff store their meals separately in the cooler.
