- Follow-up to inspection conducted on November 29, 2023 (Report #YTAN-CY2QWE).
- Hand sinks were properly equipped.
- Food-contact surface sanitizer was readily available for use at 200 ppm (in sanitizing compartment of triple-sink and in designated sanitizer pails).
- All hot-held items (chicken, barbacoa beef, pork carnitas, beans) available in the steam table and Alto-sham at time of inspection were measured to be above 60C.
- Temperature log templates have been updated/created to include hot-holding temperatures for each food item hot-held in the Alto-sham.
**As discussed with staff onsite, ensure to also include hot-holding temperatures for items held at the steam table, as well as reheating/cooking temperatures of each item:
1) Reheating/cooking temperatures must be at least 74C (165F). These temperatures are taken after food items are finished cooking/reheating in the oven.
2) Hot-holding temperatures must be at least 60C (140F). These temperatures are taken once food items are held in the Alto-sham or at the steam table.

**Reminder that going forward, repeated violations will result in enforcement action being taken and includes the issuance of violation tickets.
