Observation (CORRECTED DURING INSPECTION): Soup in hot holding unit was at 48C. All hot foods must be kept at 60C or above at all times.

Observation (CORRECTED DURING INSPECTION): Hand wash station in front dumpling preparation area was blocked with seafood thawing in sink. The soap dispenser was also not dispensing any soap.
Corrective Action(s): Sink cleared out during inspection and separate bottle of soap with pump available during inspection.
**Keep this hand wash sink empty all the time and repair/replace the liquid soap dispenser so it dispenses soap easily. Due: Friday April 21, 2023

Observation: Wooden cutting board in front dumpling preparation area had a large crack on the left side running along the middle of the board and flour/food debris was building up inside the crack.
Corrective Action(s): Give board a deep clean and repair the crack with a durable, food grade material. Due: April 26, 2023

General observations:
√ Coolers ≤4°C, Freezers ≤ -18°C
√ Room temperature holding reviewed with owner who said that food is only kept out at room temperature during lunch/dinner rush for approximately 1 hour
√ Good food storage practices noted such as thawing in cold water in sink, raw meats stored separate from ready to eat foods
√ Food up off floor ≥6”, good stock rotation noted
√ All other hand wash stations fully stocked with hot and cold running water, liquid soap and paper towel
√ Bleach sanitizer available at in buckets but was very strong
**Only 5mL (1 teaspoon) of bleach is needed in 1L water
√ High temperature dishwasher sanitizing at ≥71°C
√ Three compartment sink stocked with dish soap, sanitizer, hot and cold running water
√ All other equipment appeared to be in good working order
√ General sanitation and maintenance is satisfactory
√ No signs of pest infestation noted. Regular pest control company comes in once per month.
√ Staff with FoodSafe (or equivalent) present.
√ No concerns with staff hygiene or food handling noted during inspection
