Observation: Back door is open (due to use of refer truck). Some minor evidence of pests behind small prep cooler/by cooking equipment.
Corrective Action(s): Keep door closed. Increase monitoring for pests. Provide copy of last pest control report to Fraser Health.

Observation: Hose at 2 compartment prep sink requires cleaning. Black residue on wall behind dishwasher. Floor behind cooking equipment (in corner) and behind small prep cooler requires cleaning.
Corrective Action(s): Clean areas above and follow a written routine cleaning schedule.

Observation: One spray bottle is not labelled. One spray bottle appears to be improperly labelled.
Corrective Action(s): Label all chemical spray bottles to accurately show contents. Provide test strips for cleaner/sanitizer to make sure it has correct concentration.

Routine check.
Sous Chef on site today has a valid Food Safe (or equivalent) certificate - good.
Note: Walk in cooler is empty and is currently being repaired/serviced today. Do not use until it can keep food at 4C/40F or colder and has been repaired.
A refrigerated trailer is available for food storage - temperature is <4C/40F - good. ** Check temperature of refer trailer regularly.
Other coolers and freezers - temperatures satisfactory. Temperature records are being kept.
Hot holding - cabinet set at about 150F. Food temperatures above 140F (60C) - in compliance. Soup crock pot in server area >140F.
*** For soup that will be hot held in cabinet for >2 hours, check and verify that the food temperature remains above 140F during hot holding time.
Lettuce for salad - pre-washed.
Other produce is washed in prep sink. *** See above re cleaning of the hose at this sink.
Prep sinks are cleaned and sanitized with a cleaner/sanitizer product. ***Verify concentration with appropriate test strips.
Cleaner sanitizer today was within the required concentration range for this chemical.
Commercial dishwasher has a hot water wash (temperature about 60C inside of the machine) and a final sanitizing rinse (50ppm+ of chlorine) - in compliance.
*** Note that the wash water temperature gauge appears to be broken.
Cleaning - see above.
Dry storage - food is up off of floor. Flour etc. in pest proof bins.
Pest monitoring traps 3 checked - empty. Note above re cleaning. Forward a copy of the latest licenced pest control report for kitchen.
