Observation (CORRECTED DURING INSPECTION): Wiping cloths observed scattered on counters and food prep area. No separation between clean and dirty wiping cloths implemented. The issue discussed with operator and use of buckets and bleach solution discussed. Ensure 100-200 ppm bleach water solution is made fresh and store wiping cloths in the solution.

Observation (CORRECTED DURING INSPECTION): Rice in containers in fridge double stacked. Operator separated the containers.

Observation (CORRECTED DURING INSPECTION): A batch of frozen chicken breasts,half frozen half thawed, noted thawing out on the counter. Proper thawing process discussed and operator moved the meat under running water.

- Hand washing maintained.
- Sanitizer 100-200 ppm chlorine solution available in spray bottles. Wiping cloths are to be kept in sanitary condition.
- Cooling units measured at or below 4C. Freezers measured at or below -18C. Hot holding maintained above 60C.
- General sanitation discussed with operator.
- No sign of pest activity observed at this date.
