Observation (CORRECTED DURING INSPECTION): Staff on-site informed that they use bleach and cleaner mix to clean food contact surfaces. Bleach sanitizer spray bottle measured >200ppm.
Corrective Action(s): Educated staff that bleach cannot be mixed with other solution. Prepare bleach sanitizer spray to measure at 100-200ppm chlorine to sanitize food contact surfaces.

Observation: A white dish holder (for clean dishes/near 3-compartment sink) is dirty at the time of inspection.
Note: Black mold observed.
Correction: Clean and sanitize the dish holder.

Routine Inspection conducted today.

Handwashing sink is being used also as a 3-compartment sink. Handwashing sink well equipped with hot and cold running water, liquid soap, and paper towels. 3-compartment sink available for manual ware washing.
Stand-up domestic cooler/freezer combination measured at 4C and -18C respectively.
Dry storage room observed to be organized and sanitary. Stand-cooler in the dry storage area measured at 4C.
Locked chest freezers outside measured at -18C or lower.
Food observed to stored at least 6 inches off the floor.
Stock bleach on-site.

NOTE: Educated operator on proper manual warewashing and preparation of bleach sanitizer for 3-compartment sink and sanitizer spray bottle. Educated that bleach sanitizer spray are to be used to sanitize food contact surfaces and not to be mixed with other chemicals.

Overall, facility is well organized.
