Observation (CORRECTED DURING INSPECTION): Two packages of bibingka and four packages of cheese ensaymada were stored at room temperature. Both package labels stated keep refrigeration.
Corrective Action(s): Ensure all food items are stored as per the manufacturer's instructions. Foods labelled keep refrigerated must be stored at or below 4C. Buns were moved into a refrigeration unit at 4C at the time of inspection.

Comments

-Both upright cooler units were at 4C.
-Chest freezers (4 units) ranged from -15C to -21C.
-General food storage practices good at the time of inspection. Foods stored off the ground and protected from potential contamination.
-Random selection of canned food items were found to be in good condition and within their best before date.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
*Operator has previously emailed copy of the salted egg invoice to the Health Department. Operator to resend copy of the invoice.
*Balut eggs should have the following information: egg carton or container should have a “best before” date and clear instructions to consumers to cook the product thoroughly before consumption. If balut eggs are removed from the original supplier’s carton, the new container should be properly labelled with the producer’s name, a “best before” date and instructions to cook the product thoroughly prior to consumption.
