Observation (CORRECTED DURING INSPECTION): Surface sanitizer was not set up at the time of inspection and a wiping cloth was lying on the counter. Note: Raw meat was not prepared this morning according to the operator.
Corrective Action(s): Operator set up 100 ppm chlorine sanitizer to re-sanitize prep. surfaces. Ensure the sanitizer and wiping cloths are replaced throughout the day (e.g. morning, lunch, and dinner time) to maintain 100 ppm chlorine sanitizer for sanitizing prep. surfaces.

Observation: A small amount of rodent droppings were observed in the following areas:
-Lower Shelf with fully covered dry storage bins
-Ledge near the corner in the back storage area and the hard-to-reach floor area between the two freezers.
-Floor near the corner of the front cash register area.

The operator states that the rodent droppings are old and they last saw new ones about a month ago and had a pest control company set up mechanical traps. They did not have information on the company name or invoice apart from a phone number however had mechanical traps set up.
Corrective Action(s): Clean all affected areas with bleach water to remove the rodent droppings today.

Implement pest control measures immediately: Check for signs of recent pest activity each morning and evening, clean affected areas with bleach water accordingly, ensure all food equipment/utensils are covered overnight to protect them from contamination, keep the doors closed, seal all entry points, sanitize all prep. surfaces prior to use, and maintain the pest control program on at least a monthly basis. Have the pest control company leave a copy of the invoice/pest control report during their next visit.

Handsinks in the kitchen and washroom were supplied with liquid soap, hot and cold running water, and paper towels.
Dishwasher final rinse chlorine residual was at least 50 ppm after running it.
Walk-in-cooler was at 3.4 degrees C (4 degrees C / 40 degrees F or less).
Curries inside the walk-in-cooler were at or below 4 degrees C / 40 degrees F.
Prep. cooler was at 2.2 degrees C (4 degrees C / 40 degrees F or less).
Sweets cooler was at 4 degrees C.
Chest freezer and one door freezer were -18 degrees C / 0 degrees F or less.
No hot holding was occurring at the time of inspection.
