Observation (CORRECTED DURING INSPECTION): Low-temperature dishwasher had 0 ppm chlorine sanitizer at the plate level upon final rinse cycle. Sanitizer jug empty.
Corrective Action(s): Staff changed sanitized jug. 100 ppm chlorine achieved at the plate level upon final rinse cycle.

Observation: New menu with various foods having no health approval. All menu items prepared in-house. Health approval was only given for salads, meat and cheese boards and flatbreads. (Reasons being: Small amount of prep space and cooler storage, inadequate ventilation). Discontinue preparing and selling new menu items, as discussed during the inspection. A food safety plan is required for new menu items.
Corrective Action(s): Submit menu and food safety plan to district inspector by the below date.

Operator adding a new and bigger prep cooler today
Operator BBQs meat outside occasionally
No changes must be made to facility (e.g. renovations, changes to kitchen, changes to menu) without prior health approval
Observed pickled foods at room temperature. No food safety plan. Item discarded at time of inspection.
Operator proposed new menu items; some items are simply replacing one dip for another (ex. humus to guacamole) but some items involve completely different process to produce final food item. Detailed food safety plans are required for these new, complex items prior to providing these food items to public.
