Observation: Improved cleaning is required.
Corrective Action(s): Clean all servery floors, especially beside coolers and sinks (eg. WB2 & 3 beside roll in fridge). Clean floors along floor/wall coving. Increase frequency of cleaning and add this to your written sanitation plan. Clean H3 ice machine tray. Clean cupboards under WB2 ice machine. All surfaces are to be impervious to moisture and easy to clean. Check wall behind hand sink in H1 and re-caulk if necessary.

Weatherby/Hogg Care Side (dishwashing & food storage kitchen on lower level and 6 serveries in Weatherby/Hogg Pavilions):
Coolers - Walk in in lower level kitchen and coolers in serveries are at 4 C or colder with the exception of Weatherby 1 (ground level) roll in cooler which had an air temperature of 7.5 C (your records show 4 C this morning). *** Door had been open recently and food is not kept in this cooler for very long. Check cooler again to verify that the temperature goes down to 4 C or colder.
Do not leave creamers out of fridge for more than 2 hours.
Hot foods - soup is currently being reheated for lunch. Reheating of others foods is being done in re-therm carts.
Hot food temperatures are checked prior to food service and records are being kept in each servery.
Hand washing - all sinks have hot/cold water, liquid soap and paper towels in dispensers for hand washing. Note: Hot water pressure at the WB2 hand sink is not very strong (mainly cold water).
***Quats sanitizer in labelled spray bottles - Concentrations range from 100-200ppm using my test strip.
***Recommend more frequent changing of Quats sanitizer. Follow manufacturer's recommendations regarding concentration/dilution and changing frequency. Provide information on quats sanitizer to Health Officer and verify concentration daily using your test strip.
Lower level kitchen - Dishwasher final sanitizing rinse reached 71 C/160 F inside of machine and gauge showed 83 C (about 182F).
Temperature sticks are also being used to verify dishwasher temperature at plate level. Records are being kept.
Cleaning - see above. WB2 servery - paint is peeling on the wall behind the hand sink. This servery will be closing permanently in 1 month.
All serveries have 2 sinks and a separate hand sink. Note: Weatherby 1 & 2 serveries are closing permanently April 4th.
Wall above chemical storage closet in lower level kitchen has been re-surfaced and is clean - good.
