Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
Observation: Pizzas were checked and ranged from 25C to 50C. A record of time tracking was provided and was created since the last inspection. However, since the records were not clear as to which pizzas and which time corresponds to each other, improvements to the time tracking is required by next follow up inspection.
Correction: Pizzas must be hot held at 60C or above OR if below 60C for a maximum cumulative time of 2 hours. Current time tracking does not indicate the length of time that each pizza were sitting below 60C. Provide improvements to the current time tracking method to specifically indicate the length of time each pizza is sitting below 60C and to be able to distinguish between the old and new pizzas of the same type. Submit improved time tracking documents to EHO for approval.

-"Too Good To Go" program has ceased by the business at this time. Therefore no updated Food Safety Plan is required at this time.
***If this program is planned to be resumed, first provide Fraser Health with an updated Food Safety Plan with this proposed change.
