Observation (CORRECTED DURING INSPECTION): 6 packages of raw meat were placed in a cardboard box on floor for thawing. Operator was brining chicken feet on floor.
Corrective Action(s): DO NOT place food on floor. Facility requires at least one additional prep table in kitchen as discussed at this time.

Observation: 6 packages of raw meat and 1 bag of pork feet stored at room temperature for thawing. Both were still hard frozen at the time of the inspection.
Corrective Action(s): Ensure all frozen meats are thawed by placing in cooler (1-2 day(s) ahead) or under cold running water. DO NOT thaw frozen meats by placing at room temperature.

Observation: Facility requires a major cleaning.
Corrective Action(s): Ensure to remove all items that are no longer in use in the facility. Reorganize entire back storage area so that all food items and stored away from non-food items (i.e. cleaning tools, chemicals, etc.). Obtain additional storage unit(s) if needed.

Observation: Front display cooler is missing a thermometer.

Comments

Routine inspection conducted:

- Handwash station adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at/below 4'C; freezers operating at/below -18'C.
- 200ppm chlorine solution available in a bucket to hold wiping cloths. Good.
- Dishwashing sink properly equipped for manual dishwashing.
- Traps in place. Professional pest control company contracted.

General sanitation of the facility requires improvement. Refer to above.
