Observation (CORRECTED DURING INSPECTION): One hand washing station was lacking paper towels at the time of inspection. Staff were using paper towel station at 3 compartment sink.

Observation (CORRECTED DURING INSPECTION): Buckets of food storage were observed stored near grease trap on the floor. Grease traps are dirty do not store food near or on it.
Corrective Action(s): Store bucket foods in designated areas for food, such as the fridge or on shelving.

Comments

Premise in general is sanitary. No signs of pests at the time of inspection.
Hand sinks in use with paper towels, liquid soap and hot and cold running water.
3 compartment sink in use. 100 ppm bleach sanitizer in use. Spray bottles with sanitizer in use.
Donair meats are sliced thinner than 1/4 inche with a secondary cooking step at 74C.
2 rice holding units at 60C or above. 3 compartment meat holding unit at 60.9C.
Service cooler #1 at 0C lettuce, #2 sauces 3C.
Walk in cooler at 3C raw donair meat.
Customer washrooms are sanitary with fully stocked hand sink and air drier.
Pop cooler at 3C bottled milk.
FoodSafe training of staff recertified in July 2018.

Note: Operator requested installing new freezer and the request was denied. Repeat infractions must be corrected by follow up, i.e. no valid Permit posted in visible location or a violation ticket will be issued.
