302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Facility uses high temp mechanical dishwasher to wash and sanitize dishes. Dishwasher was run multiple times but the temperature was read around 66C on plate level during rinse cycle. This could result in inadequate sanitizing of dishes. Technician came on site and temporarily converted the dishwasher to sanitize using bleach. 100ppm chlorine residual recorded during rinse cycle.
Corrective Action(s): Please ensure that all food contact surfaces, dishes, equipment are adequately washed and sanitized.

Observation: Small hole was observed in the corner near deep fryers. This could be a potential entry point for pests/rodents.
Corrective Action(s): Please seal the hole/gaps that could result in pest entry into the facility.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Ice build up observed in the walk in freezer.
2. Empty milk carton and broken egg shells observed behind the cooking line.
3. Build up of grim observed on the backsplash metal wall in the dishwashing area.
4. Backsplash in the meat processing area had spills and found in unsanitary condition.
Corrective Action(s): Please thoroughly clean the facility including the abovenoted areas.

Observation: 1. High temp mechanical dishwasher unable to reach at least 71C on plate level during rinse cycle. Operator ran it multiple times.
2. Seal on one side of walk in freezer door is broken and taped off.
Corrective Action(s): 1. Repair the dishwasher IMMEDIATELY and ensure that it is able to adequately wash and sanitize the food contact surfaces.
2. Please repair/replace the door seal. TO BE CORRECTED BY - March 31, 2025

Routine inspection conducted

NOTE - New Operator has taken over the facility. As per the Operator, the legal ownership remains same. Operator confirmed that the facility operation including the floor plan, food menu, Food Safety Plan and Sanitation Plan will remain same as well. As discussed, please submit the following documents by March 31, 2025:

Observations:
- Temperature of all coolers recorded at or below 4C
Front undercounter coolers (x5) at 4C, 4.1C, 4.8C, 4.2C and 4.9C
Front stand up cooler at 4C
Front pop cooler above shelf at 4C
Front stand up pop cooler (large) at 3C
Front side cooler (along the wall) at 4.3C
Main kitchen prep cooler at 3C
Stand up cooler at 4.9C

- Temperature of freezers found satisfactory.
Walk in freezer at -11C
Small white freezer at -8C
- Hot holding units in the front recorded above 60C
- All handwash stations had adequate supply of hot and cold running water, liquid soap and single use paper towels.
- Sanitizer spray bottle available and the concentration of QUATS recorded at 200ppm.
- 2 compartment warewashing sink available for manual dishwashing.
- Food storage practices were found satisfactory.
Food was stored at least 6 inches off the floor.
Food containers were properly covered.
Raw meat was stored in bottom shelves below ready to eat food/produce.
- Dry storage room was maintained in sanitary condition.
- 2 meat slicers and 1 meat grinder was in use at the time of inspection. As discussed, if the meat slicer is continuously used, please clean and sanitize it every 4 hours or as per the Sanitation Plan.
- Ice machine maintained in sanitary condition.
- No signs of pest activity observed at the time of inspection.
- Operator has valid FOODSAFE Level 1 certificate. Expiry date verified.
- Permit was posted at the front.

CORRECTION ORDER issued during previous routine inspection has been rescinded.
