Observation: Upright cooler at Maple Hills ECU registered 10-11 degrees C at the time of inspection.
Corrective Action(s): Repair or adjust the cooler so that it maintains 4 C/40 F or below at all times. Re-check the cooler within 2 hours and inform
maintenance if not maintaining 4 C. ( Immediately).

* Recommended purchasing pre-cooked sausages to minimize food safety risks related to undercooking. Alternately, if raw sausage are to be cooked from frozen,
recommended boiling them prior to baking.
* Ensure to check internal temperature of sausages and turkey after cooking to ensure these items are cooked to at least 170 F/77 C.
* Ensure that a spray bottle of quats sanitizer ( Ostro San) is available in the kitchen to sanitizer food contact surfaces.
* Please forward copies of the FOODSAFE certificates for Rec theapy staff.
* Please ensure staff review the FOOD SAFETY PLAN for rec therapy kitchens.
