Observation: Meat Fridge measured 10C and dropped to 7C in 10 minutes after staff adjusted the temperature.

According to the temperature log, Meat fridge measured 49F and Milk Fridge measured 41F in the morning. Fridges may be on defrost cycle.
Corrective Action(s): Continue to monitor the temperature and ensure that temperature drops to 40F (4C).

Observation: Hand sink was equipped with hot & cold running water. Paper towels in stock. Hand soap dispenser was out of batter at the moment. Staff used dish soap to wash hands.

Comments

- Staff on site is FOODSAFE-trained
- Foods are handled as per Food Safety Plan (Sandwiches made on site in the morning, kept in display cooler and discarded at the end of each day. Wraps are delivered from off-site, kept in display cooler for up to 5 days)
- Temperature log is in place
- >200ppm chlorine detected in sanitizer spray bottle. Ensure that 100-200ppm chlorine (1teaspoon bleach per 1L wataer) is maintained.
- Display cooler measured 4C
- Accumulation of dust noted on the fan. Cleaning required.
- General sanitation is adequate
