Follow-up to inspection report #KLIU-C66TYV Code 205 and 308 have been corrected > Prep cooler able to maintain air temperature of 4C. > Sliced beef stored in bottom drawer probed at 2.1C. > Wontons stored in middle drawer probed at 4.2C. > Insert level had air temperature of 5.2C at time of inspection. Staff have been reminded to keep the lid closed at all times when not actively using. Digital thermometer read 31F. Recommend to decrease by another 1-2 degrees to compensate for surrounding hot equipment (i.e. hot water well, stove). Signature not obtained due to COVID protocols. Report reviewed with staff on site.
