205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Two small coolers in the kitchen measured >4C. Probe thermometer read 8C in prep cooler and 11C in three tier cooler. Employee noted that they moved foods from the walk-in cooler to these smaller coolers in the morning. They were directed to move them back to the walk-in cooler unti the coolers are able to maintain 4C or below.
Corrective Action(s): Monitor temperature and call for repair if these coolers are unable to drop temperature to or below 4C. Do not store perishable foods in these cooler until temperature drops.

Observation: Observed ice scoop stored on top of the ice machine which pay contaminate the scoop with dirt and other contaminants.
Corrective Action(s): Obtain a proper container to store the ice scoop.

Observation: Door handles are sticky. (glasswasher, coolers) Light bulbs are havily coated with dust.
Corrective Action(s): Deep cleaning is required throughout the kitchen.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Low temp dishwashre is unable to produce adequate chlorine. 0ppm chlorine detected at plate's surface at the end of the cycle.
Corrective Action(s): Do not use the dishwasher until it is confirmed that the sanitizer (50ppm chlorine) is detected at plate's surface. Implement manual dishwashing in the interim.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: Main cook was not on site. Two other staff who were present at the time did not have FOODSAFE level 1 training and basic food safety knowledge was poor (not aware of danger zone temperature).
Corrective Action(s): Ensure that in the absence of the main cook/operator, at least one staff on site have FOODSAFE level 1 training.
