Observation: Prep cooler and walk-in cooler are experiencing intermittent issues regarding ice buildup (walk-in cooler) and high ambient temp during the day. Operator indicates that the temps of both units return to acceptable levels (ie. below 4 Celsius) when he manually defrosts the walk-in cooler (turning unit off for an hour) and moves the prep cooler away from the wall.
Corrective Action(s): Refrigerators should be capable of maintaining ambient temps below 4 Celsius throughout the day without these measures. Operator contacted a repair company to inspect and repair the 2 refrigerators.
*Move all potentially hazardous foods into the walk-in cooler (proteins, dairy, etc.) and defrost the unit to ensure that it maintains a temp of 4 Celsius or less until the repair technician can assess and repair the units.
*Provide confirmation to your health officer once repairs are completed.
