ROUTINE INSPECTION

Bar
- Hand washing sink maintained. Paper towel available in dispenser.
- Glass washer final rinse measured 12.5-25 ppm Ioudin concentration. Ensure to keep test strips available and test daily. Ensure to keep recording updated.
- Sink and Surface sanitizer available in spray bottle and labeled. Test strips were available.
- Ice maker and ice bucket maintained. Ice bucket was clean. Ice well maintained splash guard noted between ice well and hand washing sink.
Kitchen:
- Hand washing done in 2-comp sink. Soap and paper towel available. Proper hand washing and use of single use gloves discussed. Staff observed to wash hand adequately.
- Sink and surface sanitizer available and tested in right concentration.
- Dish washer registered at 73 C. Ensure monitor the final rinse water temperature daily. (71C MINIMUM). Detergent and rinse aid available. Implements on dry rack sorted and organized.
- Line cooler measured at or below 4C and temp. monitoring log maintained and kept updated.
- Upright freezer measured at -18C or colder.
- Under counter coolers were at or below 4C
- Lamb Sous- vide procedure discussed. FSP available to follow.
- Hood exhaust grid has some grease build-ups. Ensure to clean and maintain.
- Dirty and clean cloths separation observed.

General sanitation is satisfactory.
- No obvious sign of pest observed at this date.
- Sink and sanitizer available in 2-comp sink dispenser.
- Lighting observed to be adequate.
- Dry storage clean and maintained. Mop sink noted and sanitizer available.
- Customer washrooms fully equipped and maintained.
