General sanitation - satisfactory. Handwashing station (the kitchen) stocked with hot/cold running water, soap, and paper towels. Coolers at < or = to 4C. Chest freezer & walk-in at -18C. Hot holding units in the front serving area measured > 60C. Crock pot hot holding unit for gravy measured > 60C. Insert thermometer - available. Fan hood - satisfactory. Surface sanitizer - available (Bleach at 100 ppm). Three compartment sink available for manual dishwashing & satisfactory. Dry storage area - organized. No signs of pest activity at the time of the inspection. Note: It is not the best practice to cover the shelve under prep. counter by news paper.
