Corrective Action(s): Wash and sanitize the aforementioned dirty knvies and knife insert immediately. Never store dirty knives in insert/holder until they are properly washed and sanitized.

-200ppm quaternary ammonium sanitizer available in pails with wiping clothes stored inside.

-High temperature dishwasher registered 75C at the plate level.
-Ice machine maintained in a sanitary condition.
