Routine Inspection:
Hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
All coolers maintained below 4 degrees Celsius.
Walk-in freezer maintained below -18 degrees Celsius.
Thermometers available in all cold-holding units.
Temperature logs well maintained.
All equipment/tools maintained in a sanitary condition.
Food storage practices very good:
- All food items covered and protected from contamination.
- All food items stored at least 6 inches off the floor.
- Meats stored on bottom shelf in the walk-in cooler.
Dry storage room clean and organized.
QUAT sanitizer in all buckets = 200 ppm. Wiping cloths stored in sanitizer solution - good.
High temperature dishwasher sanitizing with >71 degrees Celsius at dish level after final rinse cycle.
No signs of pest activity at the time of inspection.
Premises well lit.
Overall cleanliness and maintenance excellent!
All staff practicing good hygiene practices and wear hairnets.
Ice machine clean. Ice scoop stored in designated container.
