Dishware and food equipment must be manually sanitized in dishwashing sinks fully submerged in 100 ppm chlorine solution for 2 minutes and left to air dry prior to use.

Sanitizer spray bottles to be filled with 100 ppm chlorine, confirmed using test strip. Ensure sanitizer spray bottles are clearly labelled as to contents.
