Observation (CORRECTED DURING INSPECTION): Line coolers top drawers air temperature measured at 7 degree, bottom drawers measured at 3 degree C. Staff stated that this cooler will be serviced next week
Corrective Action(s): Reduce the food to store in this cooler. Food must not store in this cooler for more than 2 hours. All food store in this cooler for more than 2 hours must be transfered to the walk-in cooler, used it immediately, or discarded. Salad in the cooler must be immersed in ice water, and exchange the ice water every 2 hours.

- Food is stored at least 6 inches off the floor
- Food in walk-in cooler is stored in good order, raw meats are stored at the bottom
- Temperature record is well maintained
- Ice machine is clean, ice scoops are stored in safe manner
- QUATs sanitizer in spray bottle tested at 200 ppm
- Chlorine residual in dishwasher tested 50 ppm
- Chlorine residual in glasswasher tested 50 ppm
- General sanitation is good, no sign of pest noted at the time of inspection
- Pest control company (ECO Lab) visited every 2 weeks.
- Staff on-site has valid FoodSafe certificate
