302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation: Sanitizing sink observed filled with trays. Quat sanitizer tested at 0ppm Quat. Quat sanitizer bottle observed to be empty. Full container of sanitizer replaced the empty one at time of inspection. Once new container was installed, final rinse tested at 200ppm. Corrective Action(s): Resanitize all utensils/ trays as it is unknown as to when the quat sanitizer container was emptied. 0ppm in wiping cloth containers replaced at time of inspection once the sanitizer container was replaced. Corrective Action(s): Mount the quat sanitizer on the wall surface above the 3 compartment sink. ***Staff informed me that all items that can potentially be chewed into by rodents (ie popcorn, breads, dog treats etc and food items packaged in "soft packaging" stored on lower shelving is all relocated to the walk in cooler at night. This will need to continue until the pest infestation has been eliminated. ***Ensure the floor containing any spilled food items is cleaned every night before staff go home. Sliders have been cleaned in meat department Shelving cleaned inside walk in cooler.
