Comments

- Temperature Control: Temperature audits reviewed. Internal monitoring of cooked food items are required to be conducted. (ie: Chicken wings)
- Mechanical Dishwasher: Low temp (chlorine) = Ok. Ensure all food contact surfaces are being washed and disinfected after use. All items are to be stored in a sanitary manner.
- Wiping cloth storage: Quat based sanitizer = Ok. Use 200ppm Quats solution and make as per manufacturer's instructions. Change sanitizing solutions in sinks and buckets every couple of hours. Change sanitizing solutions in bottles daily. Use test strips to measure the concentration of sanitizer.
- Food Storage: Refer to Violation Notes. Provide implements with handles for food dispensing. Cups with no handles are currently being used.
- Sanitary Facilities: Ok.
- Chemical Storage: Ok.
- Sanitation: Ok. Cleaning of "hard to reach" areas discussed. (ie: bottom storage shelves, under prep line inserts, below and under equipment - along walls)
- Staff Hygiene: Discussed.
- Pest Control: Monitoring is required to be conducted. No signs noted this date.
- Structurally: Previously noted. Repair wall next to computer terminal prior to next inspection!
- Garbage, Recycling, Oil and Composting Storage: All items are to be stored in covered, food grade containers.
- Food Safe Trained staff are required to be on site at all times. Training certificates are to be kept on site. Refer to Violation Notes.
- Corporate FoodSafety Plan and Sanitation Plan to be kept on site for reference.
- Fraser Health permit is to be posted.
