Comments

- All other hand washing sinks were properly supplied with hot and cold running water, liquid soap, and paper towels
- Quat sanitizer solution available at 200 ppm in spray bottles and from dispenser. Quat test strips available for use.
- High-temperature dishwasher achieved 71C or greater at dish surface during rinse cycle - good
- All coolers were maintaining temperatures of 4C or colder
- Freezer was measured to be at -21C
- Hot held food items were measured to be at or above 60C
- Equipment maintained in sanitary conditions (i.e., ice machine, dough machine, beverage machines, can opener, deli slicer)
- No signs of pest activity noted at time of inspection
- Temperature records for coolers well maintained. Ensure log for dishwasher is also being maintained.

*Dry storage area requires better organization. Reminder that all ingredients must be properly covered and scoops must be stored such that handles do not contaminate the food.
*Walk-in cooler and freezer require better organization - operator is currently in process of reorganizing.
