Observation (CORRECTED DURING INSPECTION): Sanitizer dispenser were not dispensing sanitizer properly and spray bottles showed 0ppm chemicals. Operator repair the sanitizer line and dispenser and all sanitizer bottles were refilled with 704-1875 ppm Sink and surface sanitizer. Test kit available.
Corrective Action(s): Ensure sanitizer bottles tested daily for the right amount of chemical. Blue/Green 272-700 (704-1875ppm).
Ensure to was and sanitize all food contact surfaces including long cutting board, smal cutting boards and SS counters used for preparing food.

Routine inspection

- Hand washing stations supplied with hot/cold running water, liquid soap and paper towel in dispenser. Ensure to practice proper usage of single use gloves and frequent hand washing.
- All coolers measured at or below 4C. Freezer measured at or below -18C. Upright cooler at the storage room measured at 4C.
- Dishwasher registered at 71C at the dish surface at the final rinse water cycle. Detergent and rinse aid supplied and in good working order.
- 2-comp sink maintained.
- Lamb/Beef Sous Vide process discussed with chef. Timer available.Thermometer available. Proper procedures followed.
- Sanitizer discussed. Ensure to test spray bottles daily after filling up.
- General sanitation is satisfactory.
- Floor noted clean.
- Ice well in bar noted clean. ice scoop stored properly.
- 12.5-25 ppm Iodine detected in glass washer final rinse. Ensure to obtain proper test kit for Iodine and test daily.
- Garbage managed properly. Back door noted close with no obvious gap under door. No obvious sign of pest activity noted at this date.
-Lighting in kitchen observed to be adequate.
