203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Cooked meat sauce in plastic bucket at 60 C and was stored in a warm water bath (without ice). Staff stated they had finished cooking 30 minutes to an hour ago. When questioned, staff were not knowledgeable about how to effectively cool this product.
Corrective Action(s): As product was still hot enough (at or above 60 C), staff were instructed to cool this product by transferring into shallow pans and placing in ice-water bath if needed.
Ensure proper cooling methods are followed as discussed in previous inspection (shallow pans, ice-water bath, or ice wand). This is a repeat violation. Failure to comply may lead to further enforcement action.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Operator purchased unscented household bleach but staff were not using it as a surface sanitizer. Inspection was carried out during opening hours on a busy prep day.
Corrective Action(s): A 200 ppm chlorine sanitizer solution was made at the time of inspection. Ensure solution is available for use at all times.
Discussed with staff when to use sanitizer solution.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Designated hand washing sink obstructed with containers, dishes and utensils and not equipped with liquid soap.
Two compartment sink not completely available for handwashing as the compartment closer to the paper towel dispenser was being used for thawing making it difficult to reach for paper towel without contaminating food.
Facility was busy at the time of inspection as it was their prep day.
Corrective Action(s): Obstructions were removed and dish soap was placed by the sink
Ensure designated hand washing sink is clear of obstruction at all times and always has hot and cold running water, liquid soap, and paper towel. This is a repeat violation. Failure to comply will lead to further enforcement action.
Consider placing signage to remind staff not to block sink and installing a soap dispenser on the wall by the sink so it not misplaced/moved around.

Observation: Staff stated they mostly use the washroom sink for washing hands prior to handling food.
Corrective Action(s): Designated handwashing sinks in the kitchen must be used for washing hands prior to handling food to prevent germs from the washroom contaminating food and food contact surfaces.
