Corrective Action(s): Ensure the bin is replaced. Sanitize the bin before transferring the flour.

Observation: Gap noted underneath the back entrance door by the office.
Corrective Action(s): Ensure a new door sweep is installed to avoid entrance of pest.

Observation: 1) Shelves and floors of dry storage room require cleaning.
2) Accumulation of grease build-up and food debris observed on sides/in between/underneath deep fryer/grill.
3) Fans in the middle walk-in cooler require cleaning.
Corrective Action(s): Ensure above mentioned areas are cleaned. Remove food debris daily and grease build-up on a regular basis to avoid attracting pest.

BAR
-Handwash station adequately supplied.
-Cut fruits for drinks stored in one side of ice. Ice for drinks obtained from the other side. OK.
-Cooler operating <4'C. Cut fruits on ice <4'C.
-200ppm QUAT solution available in labelled spray bottles.
-Drink dispensing gun/holder in sanitary condition.
-Glasswasher achieved >12.5ppm iodine at final rinse.
-Washroom handsinks satisfactory.

KITCHEN
-Handwash stations adequately supplied.
-Refrigeration temperatures satisfactory; Hot-holding temperatures satisfactory. Bacons on grill >60'C.
-Temperature monitoring system in place.
-General food storage practice good. Good cooling procedures observed at this time.
-Ventilation canopy hood maintained. Next service in December.
-200ppm QUAT solution available in labelled spray bottles throughout.
-Low temperature dishwasher achieved >50ppm chlorine at the plate level after final rinse.
-Daily log maintained for dishwasher sanitizer concentration. Checked at this time.
-Ice machine satisfactory. No scoop stored in unit.
NOTE: The white plastic lining inside the unit to be replaced.
-No evidence of pest activity observed.
