Observation: Heavy slime build up noticed inside the diswasher. It appears that dishwasher does not drain properlty and/or not cleaned on a regular basis.
Corrective Action(s): Clean the dishwasher strainers and interior of the machine thoroughly. Repair or adjust the machine as required to ensure that it reaches 50-60 C during wash cycle and at least 82 C./180 F during the sanitizing cycle (immediatley).

Observation: A number of rat droppings were seen in the concession.
Corrective Action(s): Carefully inspect the entire premises especially underneath and behind equipment and grease trap and remove all droppings
Clean all affected areas with detergent followed by hot water and bleach sanitizing. This includes all tables and countertops.
A licensed pest control operator's report is required before opening the concession ( ASAP).

Observation: The dishwasher drain is kinked and may not work properly to drain the dishwasher.
Corrective Action(s): Adjust or re-install the dishwasher drain. Ensure to monitor and record dishwasher wash and sanitizing temp every day it gets used. ( Immediately).

Comments

* Seal the gaps ( approx. 4 inch) in the ceiling around the commercial fume hood. This will prevent contamination of the food prep areas from falling insulation materials.
* Install weather stripping on the door located near the fume hood.
* Clean and organize the entire premises. Ensure all items are stored off the floor on shelves.
* Remove all items that are not needed for the food premises' operation.
* Replace the thermometer in the under-counter refrigerator.
* Detailed cleaning procedures and checklists must be submitted to our office (by Feb. 10, 2019).
