Routine inspection - Hand washing stations supplied with hot/cold running water, liquid soap and paper towels in dispensers. Ensure all paper towels are stored in dispensers in order to protect them from potential contamination. - All cooling units measured at or below 4 degree C. Freezers measured at or below -18 degree C. Thermometers noted inside or on units. Ensure to keep temperature monitoring log updated for all units. Keep records for next routine inspection. - Hot holding units measured at or above 60 degree C at the self serve buffet. Salads and cold food noted stored on ice and safe temperature maintained. All leftovers to be discarded. Confirmed with staff. - Kitchen sanitation observed clean and floor free from grease and build ups. - No accumulation of dust or grease noted. Oven range exhaust was clean and maintained. - Dish washer registered at or above 71 degree C. Clean and dirty dishes separation noted. Detergent supplied and stored properly. Ensure to measure final rinse temperature daily and keep records. - Sanitizer QUAT 200 ppm available in spray bottles. Ensure to label bottles properly. - Dry storage maintained.
