Observations During Inspection:
- Facility in EXCELLENT sanitary condition
- No evidence of pests
- Pest control program in place
- Handsinks adequately supplied with hot/cold water, soap, and paper towel.
- Coolers observed at 4 C or below in prep area and on sales floor
- Freezers observed at -18 C or below
- Hot Holding observed at 60 C or above
- Sanitizer solution in food preparation areas and at 200ppm QUAT
- Sanitizer solution from dispensing unit at 200ppm QUAT
- Three compartment sink method in use
- Raw meat stored below Ready to Eat food items with a separate walk-in cooler for raw poultry
- Light covers in place
- Cooler handles and seals in good sanitary condition
- Hand washing practices observed
- Meat slicer cleaned in place with spray sanitizer solution after each use and taken apart and completely cleaned and sanitized every 4 hours
- Staff personal items kept separate from kitchen equipment
- High temperature dishwasher observed at 82 C at plate level
- Accurate thermometers observed in cooler units
- Food stored 6 inches off the floor
- Single-use containers stored inverted
- Food not in the process of cooling observed covered in cooler units
- Hot holding unit observed in sanitary condition
- Cooling units on sales floor observed in sanitary condition and food is not overstocked
- First-in-first-out being utilized
