Follow-up inspection (JGUU-CRVRRS) conducted:
High temperature dishwasher is replaced with a same model (Jet-Tech EV18). Sanitizing cycle measured at 72.3C at the plate level.
All food contact surfaces to be washed and sanitized using the dishwasher prior to use.
No other issues noted at this time.
